What a lovely birthday! My wife [livejournal.com profile] bunnyohare made the most delicious dinner for me!

The Perfect Peach Tart

That was the lovely peach tart she made for the dessert.

Here are the rest of the delicious pictures.

The tart was very peach melba-like, with raspberry sauce, vanilla ice cream, and a leftover square of chocolate from the Art Bar given to me by my extremely nice supervisor at work.

The mexican lasagna was unbelievably yummy, the best ever -- far more than just a vehicle for the lovely avocado creature. Vegetarian, to boot, and nice and spicy!

I have the best wife ever! I love you, darling.

Huh uh. Martha Stewart made that peach tart. It's too perfect looking. Bunny had it jetted down from NYC just for your birthday. :nods:

Everything looks so delicious. Really. I wonder if I could twist your wife's arm and get the recipes for the tart and the Mexican Lasagna? I'd go over to her journal and bat my eyes, and all, but I don't want to be doing something like that on your birthday!!! :hee hee:

I don't know how she made the tart exactly, you should ask her -- but the lasagna I know --

-Pre-sautée the Veggie Gimme Lean, half a package
-Pre-sautée some chopped up onions, green bell peppers, and mushrooms
-Also pre-sautée the sliced medium thin yellow squash

(All done in a non-stick pan with the tiniest bit of olive oil.)

Pre-heat oven to 350 F.

-Pour some Very Veggie / V8 type tomato drink in the bottom of the pan, just a bit, a square tin baking pan as shown in picture.

- Put a layer of whole wheat tortilla in the pan
- Then a layer of refried beans,
- Pepper jack cheese,
- A bit more Very Veggie,
- Another layer of tortilla,
- A thick layer of any brand of salsa,
- The Gimme Lean, yellow squash, onions, and peppers.

- Then, crucially, some DL Jardines Peach Salsa which is made in Texas and is the best salsa ever.

- Bake for 18 minutes at 350.
- Move the oven to 400, add a bunch of pre-grated "mexican" cheese, and bake for another 8 minutes or so.

Adjust cooking times and temp to your oven. We have a gas oven (YAY, for the first time in forever).

You are welcome! Also, the raspberry sauce for the tart was just some frozen raspberries, vaguely defrosted, with half the batch mashed up w/ a fork.

Served w/ Guacamole, olives, avocado, sour cream, cilantro, salad. The more avocado type creatures, the better.

Tart recipe:

-Parchment in bottom of springform pan
-Layer of thawed frozen peaches, or fresh ones are better if you have them, or use nectarines or plums
-Mix/beat together one stick (1/2 c) softened butter w/ about a cup of sugar and 2 tsp of Vanilla, and an egg.
-In separate bowl, mix a cup of flour, a tsp. of baking powder, and 1/4 tsp salt
-Mix dry and wet ingredients together
-Spread this dough over the peaches. Consistency should be halfway between cake and cookie dough, its more liquidy than cookies by far, but more solid than the usual cake batter.
-Bake for 35 minutes

She just made this recipe up as she went along, she says you can probably google for a good plum tart recipe, and substitute whatever fruits you want.
