Panther help

chickenCan someone help me with a Panther (OS X 10.3) problem?
The way they've subtly rearranged the System Preferences is a bit confusing. There used to be a control panel there in Jagar called 'Internet' in which one could specify one's default Email client, in the not surprisingly titled 'Email' Tab. It all made sense.
But now in Panther, that whole control panel is gone! Where did they move it? How can I specify/change my default email client in Panther?
